Ok be honest, was anyone else addicted to this rice crispy things that were totally cool when we were at school!?! Sadly for me my nutritionist mother did share my same love for sugar laden treats and so I only got to enjoy them at parties or special occasions.....Wahhhh
IF ONLY mum knew this recipe back then!!!
I actually started making these just before I fell pregnant, and then when was pregnant I became low key obsessed with them. I would be making a new batch every couple of days! (No regrets, lol It was one of the fee foods I could actually stomach!)
Not only is THE EASIEST easiest recipe you will ever make, but its packed with good fats, omegas, protein and fibre that your hormones will love!!
Keep in mind it does still contain complex carbohydrates and natural sugars, so if you are insulin resistant/ sensitive try not to get too addicted to them like I did, and enjoy them in moderation.
Anyway I am going to stop talking and give you this recipe so you can make it and see what I talking about hehe!!
INGREDIENTS
1/3 cup unsalted, natural creamy almond butter
1/3 cup pure maple syrup (rice malt syrup or agave can work here too)
2 tablespoons coconut oil
1/3 cup extra dark dairy free chocolate chopped into small chunks
sea salt to taste
(You can also add in your fav nuts, seed, dried fruits whatever you like!!! But this is the base of the recipe, i love adding hemp seeds into mine!)
DIRECTIONS
Line an 8 inch baking pan with with backing paper. Set aside for later.
Add almond butter, coconut oil and maple syrup to pan on low heat. Gently mix until well combined and runny.
Take off heat and add the rice crisps to almond butter mixture, then mixin the chocolate chunks (some will melt into the mixture snd some will stay nice and chunky!)
Stir and fold until well-incorporated.
Pour into the prepared baking pan. Using a rubber spatula, smooth into an even, very tightly packed layer.
Chill in the freezer for 1 hour. Remove and slice into square treats.
Store in fridge or freezer
